Help With What This Xbox 360 Cable Is
I've been trying to sell this Xbox 360 Cable in my FS Thread for $1.00.
I'm just not sure exactly what it is called.
It is some sort of AV Cable Converter?

^^^ No point. The Xbox 360 with HDMI already has an optical port in the back. Not to mention HDMI can pass higher-resolution audio so it would defeat the purpose to use both.
This adapter was specifically designed so that players can use HDMI and still connect a headset. See, Microsoft and 3rd party cable manufacturers built there AV/Component cables to block the HDMI port. Not sure why they would block it but you can't have both HDMI and AV/Component connected at the same time. It's just another way for Microsoft to charge for another useless cable that could have easily been avoided if they just built the cables to not block the HDMI port.

It's a worse mess than that.
fat 360: needs an AV cable for optical, even after the HDMI update.
360 S: integrated optical
360 E: removed both the AV and optical ports, and is not compatible with optical.
(if you're curious, the multi-AV port was replaced by composite. so 360 E doesn't support component, VGA, s-video, or RGB SCART either)
This cable allows you to use HDMI and optical simultaneously. I have 2 because my receiver is a little old and doesn't support HDMI in so I had to use optical.
