1X8 should be fine for shelving with the supports you mentioned in back. If you don't want supports in the center then what I would do is add a 1x1 along the entire front of each shelf on the underside flush with the front of the 1x8. Looks nice but you will lose a little cleareance. So you may need to expand the size of the entire shelf to offset.
