RetroPie Help!

I have recently purchased a couple of Raspberry Pi 2s for me and a friends of mine so we could play emulators off of it. I loaded up the latest version of RetroPie onto an 8gb Micro SD card and loaded it into the RP but I am having trouble figuring out what to do from here. I finally got a PS3 controller running on it but I don't know how to access the individual emulators. When I load it up there is only Apple2, IBM, Macintosh, Ports and ScummVM. Do I need to load roms before the emulators appear? Also.. how do I initially go about loading roms?

I have a 64gb USB stick I would like to use to store my roms. I am going to use this guide to set the machine to read the roms from the stick: http://mardell.me/blog/how-to-load-roms-from-a-usb-drive-on-retropie/

Do I need to do anything else before this? Also.. do I do the configuration in the RP itself.. or open the .cfg file in Windows and configure it?

Thanks!!
