Even the BIG machines used by airlines only go to +/- 1.2g (and they can move linearly as well as rotate).
You CAN simulate extreme manuevers in some of the high-end military sims, though. They have a capsule on the end of a stick and you get spun around in a centrifuge. Those can simulate 3g in any direction.
(For a true "barrel roll" you stay at one 'g' the whole time...so technically sitting on your butt, immobile, and watching a video screen spin will simulate a barrel roll)
