It's definitely possible for N64 if Italia is in the loop from the beginning, since he takes down all those games no-one else wanted to touch like they were nothing
SNES is a massive hurdle. If we had the sheer numbers of the NES crowd, it may happen someday. But I'm not doing 100 again, so there already going to be a void to fill

Yup, he's been tearing it up (in the best possible sense). The N64 library is eminently doable in a year, and the main obstacle is manpower + clarity about exactly what's needed to beat the odd sports and racing games. I'd participate more but I have very little N64 experience, so I'm learning nearly every game from the ground up.

But if next year, the NES's full non-Asian library is defeated, I can't see why the main effort wouldn't switch over to the SNES in 2017, unless they're planning to tackle the full Famicom library (which is essentially impossible).

There's also a lot of "Ok, how do I beat this game" stuff with snes that we have that amazing list for on nes. Some snes games pull some true BS, like tough enough not having an ending.
