I haven't beaten any Castlevania game at all. Or Battletoads, although I feel like all eventually cross those off. Mike Tyson's punch out is one that I'll probably never finish. the funny thing is, my timing has gotten a lot better, but my reflexes are a lot worse these days. Basically I have a great feel for when I'm supposed to react, but I'm no longer fast enough. I've gotten to Tyson, just never beaten him.
I've never beaten Contra without the Konami code, but I've done super C and Contra 3.
I think if there's one series I regret not finishing at any of the Adventure Island Games. those really force you to practice every stage to get perfect at it, & I have no idea when I'll have enough time to do that.
This question is pretty hard for me to answer. The games I really enjoy are ones I play through to the end, and if I don't finish the game it either means I didn't like it that much or I barely spent any time with it to make such a judgment.
Thinking about it, I'll go off the board a bit and say Equinox on SNES. I've played most of the way through it twice and I really enjoyed it. I must have gotten distracted both times by some new game that game out and I never bothered to go back and finish it.

Definitely on my eventual "would like to finish it" list. Can't remember where I get hung up, but it's enough longer than Solstice, and with larger rooms/maps, that I've never gotten around to solving all of the mazes and actually beating the game.

I'm a sucker for boss battles and even though they are a bit awkward with the perspective I enjoy them. This one is on my "eventually want-to-beat" list as well!
Pocky and Rocky - I've only been playing by myself, so it might be easier with two players. Nevertheless, that game is it brutal.
Forgot about this one. I recently acquired both and 1 its impossible. I don't want to try 2 until I beat the first one.
Yeah man. It's just so hard, yet so fun.
After playing Pocky and Rocky by myself and only getting to the fourth or fifth level, I was finally able to beat it with a friend. Having both characters is a pretty big help, especially if you can be well-coordinated. Great game though, still looking forward to the second.
The game I've been struggling to beat is R-Type III, the last boss sequence is so incredibly frustrating I haven't even tried in a few months. At a certain point the screen nearly fills with projectiles and the boss never seems to die. Maybe on my next attempt though....

Same here. I usually get stuck on Sandman, only made it to Mike Tyson/Mr Dream once and did not make it very far at all. :-/ Where do you get stuck?
Streets of Rage - On the last stage you have to fight Mona and Lisa without any police backup. Good luck with that.
