They did but it is being sold in 3 waves so they can keep up with shipping. It took 10 hours(not LRG fast) to sell out and the other waves will likely take more, most of the demand has been met. The snes took 7 hours and the genesis took 10 so not a half a hour.
I did the Kickstarter for this waaaaaay back. I was lucky enough to back 3 cables, so I've been using them for my Master System, Genesis, and SNES. The nice thing about the Kickstarter was getting them at a much cheaper rate. I was surprised how much more expensive they have become. However, don't let that scare you away. Even at the higher price, I think the cables are worth it. I didn't know until this past week that they had developed an adapter for the Sega Saturn. I will probably order that soon, and when the cables become available again, I will order another Sega cable. I'm also thinking about getting another Nintendo cable for my N64. Just need to look into what kind of mod work is required.
If you can get your hands on these cables, I can't recommend them enough.

Since they didn't sell out before the cables sold out in the last batch, I think you are safe to wait. You could order the adapter now just to be safe, but you will obviously pay extra shipping to order it separately.

I was exaggerating a bit, obviously. Still, I'm pretty sure the next two waves will sell out quickly as well and then they'll go another year without having them in stock. The demand will likely continue to be there for some time. If you look at sellers on ebay like retro_console_accessories, who've been around for years, she's sold thousands of RGB accessories for all the retro consoles, so clearly, the market for it is as strong as ever. I'm just surprised these guys haven't always kept up with demand because it is there. However, I don't know what kind of money or moves it takes to always keep stuff like this in stock, so I'm just talking out of my ass, basically.

When HD retrovision finished the kickstarter order they were in the red till, they sold the extra cables made from KS. They have to go through R&D on a product line that is very complex, each unit has a circuit to convert RGB signals to something that can work on component.
Manufacturing is a hard and long process that costs a lot of money upfront and you do not see a return for a long while, this is a very different business model then someone making a couple hundred or thousand cables by hand with less money tied up a year.
Obviously when these cables run out, there will still be a demand and i am sure that more will be made if the PS1 adaptors pan out.
