Anyone into grilling/BBQ?

Last summer my friend gave me a nice 22" Weber charcoal grill. I grilled on it a few times with little success (brunt food, didn't understand indirect heat). This year I've done some research and have done some really great meals. I picked up a chimney and stopped using lighter fluid, which seems to be a big improvement. I've also started making my own BBQ sauce and add jalapenos and onions that were smoked on the Weber!



Any other members into grilling/BBQ or have a good grill recipe?

  • I love grillin! Haven't done it much the last year or so but i use to be all about it! I need a new grill, i threw out my old one when i moved but hoping to pick one up for some summer grillin!  
  • I used to be pretty into it, but my wife is vegetarian so I kinda fell out of it. I was never any sort of master, but certainly enjoyed myself. I've pitched having a small BBQ for the little patio we have, but realistically we'd only be able to do vegetarian stuff on it cuz it'd have to be small so no space to split it.



    Someday.
  • You should try grilling stuff up using some maple wood planks, it is tasty as all hell. Not sure if you are into fish or anything but grilling up some salmon over top of a maple wood is excellent.



    I always liked using those roasting potatoes as well on the BBQ wrapped in some tin foil, best potatoes you can have other than scallops in my opinion.



    Throw some asparagus with lemon seasoning on there and you got a nice little meal goin.
  • I just got a house last year and we don't have a grill but plan to get one soon this summer. I can't wait to grill because honestly grilled food is the best. I am a huge fan of BBQ stuff.

    One of the drawbacks from really getting serious about grilling is that now I have to refrain from ordering steak at restaurants since it's almost certainly going to be a disappointment.

    It's not a disappointment once you get used to grilling your own steak and realize how great it tastes..



    Just order something else at restaurants, since their steaks will never compare to your own!

     
  • I like grilling too, as well as proper barbecue.



    What really grinds my oats is when people mix up the words "grill" and "barbecue". Real barbecue requires smoke, low heat and a long cooking time. Pulled pork is one of many classic barbecue dishes. Grilling is really just cooking over high heat on grill bars. Technically you can add smoke to grilling, but the food never stays in the smoke long enough to ever compare to true barbecue. You would never want to put a pork shoulder on a grill, it would be extremely tough, that's what barbecue is for.
  • I do lots of grilling and Rotisserie my Cornish hens, they come out delicious.

    Found out the expensive way, nowdays I resist the temptation to order that fine looking ribeye (that I'm going to be nitpicking), I'll just order something else, haven't gotten into grilling seafood so that's a good choice for me at restaurants if I really want to eat something grilled.

    That's super cool, what do you smoke? My outdoor space is pretty limited right now so no space for a smoker. I haven't tried it yet, but I'm going to experiment with doing a longer smoke on the Weber kettle using the snake method:

  • I grill once a week. Once I learned about "zones" and got some practice I got pretty good. I do salmon, tri-tips and fillets often.
  • I love grilling a good steak or burger. Haven't done much chicken or vegetables or pork. I really wanna buy a smoker and start dabbling in that soon. You just cant beat meat cooked over a fire.
  • I love grilling and eating BBQ. On my days off I usually grill about twice a day, no matter what the weather is all year round.

    I enjoy smoking meat as well as marinaiding. I recently picked up a tool to inject marinade into meat.

    I've done mostly pork shoulder/boston butt, I've tried doing some beef too but it's tricky to get it right, pork comes out good just about every time.



    Weber kettle is good enough, no need for a big smoker, I don't own one but since they're good quality the lid should seal tight and allow you to go low and slow.

  • I love getting out the webber and doing some grilling. Burgers, chops, ribs, pork shoulders, steaks, corn, you name it. Once you learn how to use indirect heat and throw some wood in with the coals, you're on the road to some fantastic meals! I use a standard Webber Kettle grill that i made a couple modifications to. I drilled a couple small holes and put silicone grommets in there so I can use thermometer probes on the grate and in the meat w/ no smoke/heat loss. Once you decide you want to do some long low and slow cooks like ribs, pork shoulders etc., being able to monitor the temp becomes a must. Check out www.amazingribs.com when you have some free time. They walk you through recipes, techhniques, rubs, marinades, how to set up your grill properly, product reviews and more. Even more important than the "how", the site explains the "Why" for everything so you can understand the reasoning. It is by far and away the best site for barbeque I have come across.



    I haven't done a ton of grilling so far this year unfortunately. I just moved to a new house in January, so not everything is set up how I want it at the new place. Add to that the weather in Chicago has been pretty shitty so far this year. My old house had a nice dedicated concrete pad right outside the back door where I had my grills set up. Now I have to open the garage, wheel it out, usually move a car, etc. I plan on doing a lot more grilling this summer though. There's nothing better than a hot meal off the grill.

  • I used too when I still had access to my parent's grill. It was pretty fun, and I used to come up with all sorts of stuff to throw on there. Raspberries are my favorite so far.
  • I'm an avid griller. At least once a week throughout the year regardless of weather. I've done it so much that I'm on cruise control with the grill and started taking advantage of the fire box and have dipped my toe into proper bbq doing pork ribs a couple times. When it comes to grilling I think you gotta try out some non-meat stuff. Chopped potatoes with butter and seasoning wrapped with foil into fist size Hershey's kisses are awesome on the grill. Corn on the cob with husks is awesome too. Just soak them in water for a while then throw on the grill. The husks will burn but not catch on fire. Even some fruit like pineapple is amazing with some char with bbq chicken. Sweet potatoes are great grilled also. Another tip is cutting off about 1/3 of an onion and using it to clean you grates once your coals are ready. It cleans well and the smell is fantastic.
