The pokemon rumble or whatever it is can be some mindless fun...It's just a button masher; my wife and I play off and on, it's entertaining especially if you're a pokemon fan.
I got her some mini golf game. I hope she can play it. You have to be really accurate with your Wiimote maneuvers. Got her a Kart racing game, that is not bad. Then I threw some Virtual consoles games on there for my dad.. she might enjoy them too. Zelda, Mario, and StarTropics. Also got her Maxx's Magic Marker or something like that, it looked cool, but I didn't try it out.

EDIT: In all seriousness, what about Gradius Rebirth? It's challenging but it's fantastic. Also World of Goo.
