I was pretty convinced it was a shell, as there appears to be nothing holding it on... however going to the original appearance of Yoshi, it appears he is born without the shell/saddle on his back. In light of this, I have changed my vote to saddle. It is apparent that immediately after being born, yoshis are saddled and forced into a life of indentured servitude.
What bothers me most is that he grew knees and thumbs. I don't even think it's the same guy.
Maybe it's because SMW Era Yoshi was just much younger back then and when Yoshi's grow up they grow thumbs, develop knees and all of the other differences shown between the 2 pics above. We don't know how dinosaurs in Dinosaur World evolve... maybe they are like Pokemon - taking on completely different shapes/traits as they grow up?
The saddle thing is still a mystery (20 posts later, still no one has explained how it stays on).
I've long forgotten the name of the book, but I always assumed the saddle was attached via the same method as this vauge book I'm alluding to. Which is, the saddle has balled off edges that make it cling to Yoshi's fleshy back.
It's from some book I read as a kid, the mounts couldn't have the saddles strapped to them like you would a horse, as they couldn't handle the restricted breathing that it caused. So the blacksmiths diveloped the saddle I described.
