Hard to beat the classics, Mario 3, Contra, Castlevania ect. I think Battletoads & Double Dragon is really cool. I came across this image while browsing some title screens.

Sword Master has a pretty cool title screen. While it's initially pretty bland, the flame animations embedded in the title are pretty nifty.
