Gah! How do I give an anti-vote for Dragon Quest I?
I wouldn't wish my worst enemy to play that game.
Not only do some of us really like it, for a lot of us it's only a 10-12 hour RPG. It's not so much "Oh I have to grind and grind and grind" so much as where you grind.
I would recommend anything Final Fantasy up until FFXI. With the spin-off titles there's not much I can suggest other than FFVII: Crisis Core, Final Fantasy Tactics, and the Final Fantasy Legend series for Gameboy. And if you're going back and looking to enjoy the classics from I to VI give the PlayStation compilations (Origins, Chronicles and Anthology) a chance. They're much cheaper than the Nintendo/ Famicom counter-parts and include updated graphics and rendered cut-scenes.
Since the classic RPGs have already been talked about at length, I figured I'd add my votes for modern RPGs:

Elder Scrolls IV: Oblivion
Elder Scrolls V: Skyrim
Mass Effect
Mass Effect 2
Demon's Souls
Dark Souls
Xenoblade Chronicles
Mass Effect 2 is my favorite RPG of the last ten years. I wasn't a big fan of Final Fantasy XIII, but other worthy candidates include Lost Odyssey, which I loved, and perhaps Bravely Default, which I've heard great thing about. I put down my Xbox 360 in 2011 to pursue classic gaming, however, so I'm sure I missed a lot of great games; I've only started to pick up modern gaming again in the last year or so.
Wow no Pokemon or Tales games in the "Should Consider" list yet. Odd eh?
I think the problem with the Tales series is that it's so large, even though people are voting for it, they're not voting for the same titles.

I personally feel the only "must play" Pokemon games are the original Blue or Red, maybe Yellow to appreciate the series' roots. Little has changed fundamentally even as of the latest 3DS entries, so it's one of those game series where you can pick any one and you've basically played them all.
It looks like I need to bump up Demon's Souls and Dark Souls.
Is there going to be a sub-genre break down? Because if the Souls game count for this list I want to put in a vote for Zelda II - The Adventure of Link (action-RPG).
Alright I've been playing Baten Kaitos on GameCube and I have to say it's definitely a strong recommendation. I don't know if it's a "must play" but it's been very good so far.

Probably because most people assume RPG means turn based, i see that happen all the time. When in actuality RPG is a broad term that overarchs many types of games(action, turn based, strategy, etc.).
Wow, way too many JRPGs on that list for my taste. I used to love JRPGs when I was a kid, but my tastes have gone to WRPGs more recently. So here is my list for votes:

Then Destiny of an Emperor and EVO for personal reasons.
And I love Final Fantasy VIII, Shining Force I, and Terranigma enough to want more people to play them, so bump them up into "Consider Playing."

I would put most of the Tales games in the "should consider" list for any RPG fan.
But then I would put almost all these RPGs in that category.
I wouldn't say they are a "must play" though.
