Everyone likes Tecmo Super Bowl, but I grew up playingg Tecmo Bowl. So either of those two would be my choice for the NES.

NHL '94 on the Genesis.

For SNES I would unplug it and hook up my Genesis for sports games.

I used to play the shit out of NCAA Basketball for SNES. Also, Roger Clemens MLB for SNES is ok. Ken Griffey Jr.'s Baseball for SNES was probably the better of the baseball games...very challenging single player as well. Baseball simulator was fun. Don't forget NFL Quarterback Club games.
