I'll say Saturn Bomberman because it's the only one I own. Dunno if the league play is a thing in any other versions but that gives it a hefty amount of replayability. I never finished the story mode.
I really, really like Bomberman '93, Bomberman 64, and Saturn Bomberman. Bomberman 64 especially because the 3D single player is so unique compared to many of the others. Even if it's not the prettiest one, I think that gets my vote. I haven't played all of them by far though. I don't think I've played a single one of the SNES games.
Very close toss-up between snes Bomberman 1 or 2. But I go to say SBM2 by a hair. SBM1 has coop for the missions which is a lot of fun, but not multiplayer battles. Whereas SBM2 has multiplayer battles but not coop for the missions! Why not I'll never know.

?? sbm1 has multiplayer battles. It came with the huge multiplayer adapter.
smb1 is the best by far. Only thing 2 has better than it is the slightly more creative level design.
I LOVED Bomberman 64: The Second Attack. In my opinion, it took everything that was great about Bomberman 64 and expanded on it. Several great multiplayer modes, solid storyline, elemental bombs, plus Pommy as your sidekick who you could level up pretty significantly. Bomberman Hero was great, too. Sucked that there was no multiplayer but the game probably has my #1 favorite game soundtrack of all time. In all honesty, all 3 n64 titles are great. The only other Bombermans I've played are Generation on the GC and Bomberman Land on the Wii, but I haven't played either enough to give a fair verdict. If I had to pick a single favorite it would definitely be BM64:TSA.

I've been wanting to get that one, but it's one of the few N64 games that are $100+. Bomberman Hero does have an amazing soundtrack, easily one of my favorites as well!
I really dig the SFC Bombermans, especially 3 and 5. And Bomberman DS was always a favorite for multiplayer when everyone I knew seemed to own a DS. How's Mega Bomberman for Genesis?

Bomberman '94 on pc engine is the best multiplayer in my opinion because you can take a ride on these bunny kangaroo things.
