Nowadays, most are going to recommend the Wii or HD versions. But, IMO, it doesn't really matter what version. If you're a RE fan, you're likely to enjoy any version.
That being said I think the GameCube version still holds up (especially compared to the PS2 version), even though it has less content. I prefer the GC controls, and the fact that it has real-time cutscenes (instead of video recordings) meaning you can actually see the characters wearing their alternate outfits in cutscenes. One thing the GC version has going for it is that it's the original; most of the other versions are based on the PS2 version.

GC version has a lot more enemies on the screen at once too. The entire game had to be rebalanced for the PS2 version because it couldn't hold up with that many enemies.

GC for sure. It was originally an only for gamecube game. The feel of the GC controller is perfect for that game. I found the ps2 version wasn't playable. People might think differently though.

Wii version is probably the most refined one at this point, not sure if it has been released on any newer console though.
