Soft boiled eggs can even leave the whites runny, depending on how soft you want it (i.e. the kind of eggs that are served in an egg cup)
But I agree with your preference for hardboiled... though I'm surprised you'd like sunny side up rather than over-medium or over-firm if you don't like soft boiled eggs.

I wish I wasn't an idiot who doesn't know the difference between soft and hard boiled, but I guess I had them hard boiled all my life, I saw them as something synoymous and seeing jelly goo coming out a boiled egg looked so wrong to me.

They're just boiled halfway and then blanched. They must have one guy whose job at the ramen shop is keeping track of the eggs and other toppings all day. Now I want some tonkotsu ramen.

Not a fan of runny egg texture in any form (yolks or whites), so no soft boil for me.
I've seen people poach and egg in the ramen water. Sounds good but I've never poached an egg before. I'm afraid the yolk will break and I'll get a monstrosity.

After the 1/2 hour wait to get seated, you end up in the gustatory equivalent of a 1970s Times Square peep show booth, where you can indulge in your shameless mastication in solitude.
The chefs take your order card, and about a minute later, you get your sides and main bowl, along with a few Japanese phrases, and then, unlike the peep show booth, here the chef pulls down the curtain so you can begin.
I got two soft boiled eggs just for you guys
A few minutes later, after the deed was done, I returned to my senses and was so full that I could barely move and almost regretting the second order (kae-dama) of noodles that I got. I'd love to go back again, but there are many other HK delicacies to eat this weekend.
