The ONLY problem with Conan is the down=jump control mechanic. Outside of that, the game is fun, quirky and unique.

Well, to be fair, the guy like Predator and I think that game is a total pile of shit and I love Total Recall to give you a view where I stand.
Slightly off topic, but similarly themed game... am I the only one extremely disappointed by the combat mechanic in Wizards and Warriors?
I used to want that game so bad, as a kid, but didn't get to play it until high school. The way Kuros sword fights is ridiculous.
The sword attack always felt off to me too and I thought the jumping was really floaty, more so now than when I was a kid. I've always preferred games that control rather naturally, like Ninja Gaiden, Batman, and Contra. With those games, the controls were tight and kept you in the action whereas Wizards and Warriors had you fighting them.
I think wiz has said his piece on this game a thousand times over. It's not a bad game, but it's not pick-up-and-play so that turns a lot of people off. You have to invest some time to get the most of out it, but once you do, it is worth it. Some of the levels are very smart and imaginative.

I envision a platformer, where you can choose multiple paths through the overall game world based on how you traverse each level. Since Conan is notoriously the king of thieves, there would need to be a strong stealth element. Also, since he's supposed to be the fastest and most skillful sword fighter in the world, there would need to be some kind of actual complexity to the battling (kind of like Prince of Persia).
At first I was thinking an open-world game (like Metroid) would be a cool way to do it, but having multiple paths and forcing forward progress makes it feel like your actions have more permanent consequences (you can't backtrack).
Kind of like that, there could be projectile combat (arrows/daggers/spears) that could be one-hit stealth kills with no chance to block. But the other combat I'd really envision like what Prince of Persia could have been if the sword play actually worked correctly. Basically, you would have a life meter (since Conan is hugely powerful compared to everybody else) and your opponent would generally die in a single hit once your blade made contact.
Funny how everyone's said what I was thinking anyway I'll just comment on something that will make you think - Conan is a port of Myth for the C64 with a license slapped on it. Myth is widely regarded as one of the best C64 games ever made. Just goes to show that even a great game can be turned to shit with a sloppy port.
Conan isn't as bad as people think, but as was said before, the controls are unresponsive, and there is absolutely no direction in-game whatsoever. The game is unforgivingly balls-to-the-wall hard, and as such, many people hate it. Now, it's not my FAVORITE game (I rank it around the #10 spot, give or take...haven't played everything after all), but it's one of those games that, while I can understand the hate it gets, seems to be hated for the wrong reasons.
As for your punches not working, try kicking instead. I typically kick everything on Level 1, then on Level 2 I switch to the sword. That's when you use the punch button...if you time it right, the up slash of the sword kills the enemies there with one hit. From there I typically keep the sword out until I get to Level 5 (no reason to switch other than to block the Gorgon's shots and then to slay the Hydra), at which point you need to use the daggers the flying shits drop in order to kill the ogres that come after you. Actually, you need them to kill pretty much everything on the level save the Will-o-Wisps. Level 6 is mostly just jumping, you rarely need to attack anything at all except the guys coming out of the two drawbridges and some Imps to replenish your daggers. You can use a pitchfork (saved from Level 1) to kill one of them easily, but it requires perfect timing, and the game has a habit of fucking you over From there, it's pretty straightforward until the end level. You need to make sure you place the urns in the right order or you die instantly. After getting the sequence right, you pick up the final weapon and use it to assrape the final boss. It may have a shittastic ending, but it's also one of the most fulfilling ones I've ever achieved, simply because of the rapefest the game itself gave me

This one, although he is talking a port, you are talking a homebrew, I think it is still relevant, I'm suprised you forgot about this one.
I don't think I'd mess with doing it in ASM on the NES, though. If anything, my real nagging programming aspiration is to make a homebrew intended for arcade play.

BTW, Conan is due a little bit of credit. Its better than the self proclaimed "game of the year" "Last Ninja."
