HDMI converter
looking around on eBay I found this:
Would this improve video quality for say, an NES or N64 on a high definition tv? I know this won't magically convert the AV signal to 1080P, but would there be some improvement? Specially for N64, I want to get a svideo cable for it, maybe plugging it to this thing instead to the tv would be better?

I wouldn't expect a clearer image per say.
The old saying "garbage in garbage out" applies here.
What would be an improvement would be to tap into your console's higher quality RGB signal (if applicable).
I would look into getting SCART RGB cables and then either an SCART to HDMI or SCART to Component convertor.
I've heard (and seen) great results, even on LCD & plasma screens.
Some of the older consoles that are capable of outputting true RGB signals are the Sega Genesis, 32x, SNES, Saturn, Neo
Basically think of it like you are adding a large pipe to a water system, you'd think the water would be able to move at a higher volume or speed, but the water pressure or in this case the quality of the signal was never increased just the medium in which it can travel.

You're probably referring to PhoneDork.
I've talked to him quite a bit about it and it does seem like the way to go for high quality RGB without defacing your poor old consoles.
